From January to February, March of the lunar calendar, the fish sauce processing trade villages are busy buying raw materials such as anchovy, scad to start a new production season. Traditional fish sauce is brewed in wooden crates using the recipe of 3 salt 1 fish (3 kg of salt and 1 kg of fish). Fish sauce processed according to traditional methods must be from 6 to 7 months. This is the decisive factor to the nutritional value, odor, and taste of fish sauce.
At present, traditional fish sauce of Phu Yen trade villages have been present nationwide and selected by the users and Phu Yen people as gifts for their friends and families.
